her father is Hermann Sittig, and her mother is Rosalia but the last name certainly is not Wedeles. And her mother is from Prague.
Rosa Wedeles might be from Prague, if she was rabbi Adam Wedeles' daughter. Adam was from Prague.

In all or various of the Birth Matriky of her grandchildren it says Barbara Hermann.

Possibility:
Joseph Bittermann married Barbara Hermann in a second marriage, so Barbara Sittig and Barbara Hermann would not be the same person.
Or for some reason people refer to Barbara Sittig as Barbara Hermann.

Probable explanation:
Samuel Sittig's Jewish name was Hershl Sittig. People may have referred to him as Hermann Sittig.
